Sofegada with xinohondros(cracked cereals with fermented milk) with a glass of Liatiko P.G.I. Crete
Pairing: With its light style and fruity character, liatiko fits perfectly with summer vegetables and fresh tomato, while its acidity balances the acidity of the xinohontros.
1 kg summer vegetables of your choice
1 table spoon tomato paste
2 slices of garlic
200 gr. xinohondros
Red wine Liatiko
Extra virgin olive oil
Cut the vegetables into large pieces, chop the onion and garlic and saute on medium to high heat.
Add the paste to sauté and deglaze with wine. Add the tomatoes cut into thick pieces.
After the vegetables have boiled and partially softened, add xinohondros and after it softens, add salt and pepper, remove from the heat and add chopped herbs.
